Degree of polymerization (DP) describes the number of fructose units in an inulin chain. Commercial inulin contains a distribution of chain lengths, so DP may be expressed as a range, average, or other distribution parameter depending on the specification.

What DP describes

For formulators, DP is a practical way to understand why two products both labelled “inulin” can behave differently in the same recipe. Average DP and the short- vs long-chain balance influence dissolution rate, viscosity contribution, fermentation behaviour, and how much fibre you can include before sensory or tolerance limits appear.

Short-chain vs longer-chain behaviour

Lower-DP / shorter-chain fractions typically dissolve quickly. They suit systems where fast solubility matters (instant beverages, clear drinks) and where inclusion rates are moderate.

Higher-DP / longer-chain fractions generally dissolve more slowly and can contribute more body and mouthfeel. Their fermentation profile also differs from shorter-chain fractions, which can influence tolerance and formulation strategy — alongside dose, microbiota, and the finished-product matrix.

How DP affects formulation decisions

  • Solubility & clarity — shorter chains favour rapid dissolution in cold or ambient liquids
  • Viscosity & gel behaviour — chicory inulin is typically low-viscosity in solution and does not form strong gels at normal use levels; longer chains can still add body and creaminess
  • Tolerance at dose — fermentation behaviour and dose interact; start low and validate consumer tolerance for your format
  • Texture / mouthfeel — DP profile influences water binding and fat-mimetic contribution in dairy, desserts, and bakery
  • Process fit — consider chain-length behaviour for wet vs dry systems, heat steps, and shear
